2022 McLaren Vale Shiraz
 
This Shiraz was sourced from Windmill Creek Farm in McLaren Vale, two rows were harvested then soaked on skins during a wild ferment for 14 days before gently being basket pressed and put into French oak barrels to be aged for 30 months.
 
A cool but reasonably dry summer gave us even ripening conditions, this slow ripening allows great flavour development and retention of natural acidity.
This will enable this wine to be cellared for a few years or to be opened and enjoyed right now.
